Quinoa & Kale with Lemon Zets, Pine Nuts & Feta Cheese
1 cup white quinoa
2 cup water
2 - 3 cups kale (depending how much kale you like)
1 lemon, zested and juiced
1 TBS olive oil (or any other oil that you like)
3 TSP toasted pine nuts
¼ cup crumbled feta cheese
Cook the quinoa with the water at medium heat in a pot with the cover on. Add kale when the water is almost absorbed. Once the water is absorbed, steam it (I put kitchen paper towels and cover the pot)
While the quinoa cooks, put together the oil, lemon zest, lemon juice, toasted pine nuts and feta.
Combine the quinoa and kale with the mixture just before serving.
You can replace the quinoa with bulgur, brown rice or any other grain that you love.
