Salmon and Avocado Salad with Roasted Wallnuts and Prunes
½ pound sliced smoked salmon
3 – 4 diced dried plums
3 tablespoons crushed and roasted walnuts
1 lemon to zest and juice
1 tablespoon walnut oil
Roast the walnuts with coarse salt. Turn of the heat and add a drizzle of walnut oil. Stir and leave the walnuts on the warm pan. And let it cool.
Slice the avocado very thinly.
Place the salmon on the plate, layer the avocado on top. Sprakle with the lemon zest.
Add the lemon juice and walnut oil.
Once the walnuts are cold; place the walnuts, the diced prunes on the plate and add some cut mint.
If you don't have walnut oil, extra virgin olive oil would work very well as well.
As always you can always vary the nuts, the fruits and the herbs.
An example would be with roasted almonds, fresh orange or tangerine, with orange zest, and basil.
