2 super packed cups fresh spinach
3 tablespoons extra virgin olive oil
3 tablespoons honey
1 teaspoon vanilla extract
1 cup almond flour
1 cup oat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
Preheat the oven to 350F.
In a food processor, blend spinach, eggs, extra virgin olive oil, honey and vanilla
In a bowl mix the dry ingredients.
Add the dry ingredients on the food processor. Blend everything.
Pour the mixture into muffin cups.
Cook for 15 to 20 min, until the muffins are firm.
If you like it sweeter use 5 tablespoons of honey. You can always add crushed nuts to get a crunchier texture.
You can replace the spinach with other leafy greens like kale.
