Dover Sole in the Oven Baked “en Papillote”

Ingredients

  • 2 dover soles fillets
  • 5 Kalamata olives (sliced)
  • 5 cherry tomatoes (sliced)
  • 2 lemons (sliced finely)
  • 1 teaspoon of rosemary, oregano or/and thyme
  • 1 bunch of broccoli rabe
  • 1 lemon zest
  • ½ lemon juice
  • 1 tablespoon extra-virgin olive oil
  • Salt/pepper

Preparation

Preheat the oven to 350F.

Lay the fish in parchment baking sheet on the oven tray. Add the olives, tomatoes, lemon slices and the herbs on top of the fish. Wrap the baking sheet.

PS. This way of cooking is called baking “en papillote” in French.

Put the broccoli rabes next to the fish. Put the lemon zest and lemon juice on top. Sprinkle the olive oil on top

Bake everything in the oven for 15 minutes. Your fish will be cooked


Variations

Like in fashion, you can dress your fish the way you want. Be playful and every time try to add different ingredients. Even for the vegetables you bake with the fish you can substitute many options including asparagus, bok choy or another vegetable you crave.
